pot roast dinner... this came out really good. i ended up having to leave it in the crockpot for 12 hours because i stayed late at work and it STILL tasted great. the broth flavor's awesome and i have leftovers despite 2 people eating until stuffed & not even using the full amount of veggies.
Ingredients
  • 3 lbs. beef chuck roast
  • 3 cups beef broth
  • 6 oz. tomato paste
  • 1/4 cup balsamic vinegar
  • 1 Tbsp brown sugar
  • 2 tsp paprika
  • 2 tsp alspice
  • 1 sprig fresh rosemary (or 1 Tbsp dry)
  • 1 lb. carrots
  • 2 small onions
  • 6 small red new potatoes
  • 8 oz. button mushrooms
  • 6 cloves garlic
Gravy
  • 2 Tbsp cooking oil
  • 3 Tbsp all-purpose flour
  • 3 cups juice from cooked roast
Rice
  • 2 cups uncooked long grain rice
