Israeli Chicken Sofrito. Slow cooked veggies (with chicken but I can exclude) with paprika and tumeric. Sounds like comfort food to me

Ingredients:
  • 8 bone-in skin-on chicken thighs
  • 2 tbsp extra virgin olive oil
  • 2 medium Russet potatoes, peeled and cut into 1 1/2-inch chunks
  • 1 medium sweet potato, peeled and cut into 1 1/2-inch chunks
  • 2 medium yellow onions, sliced
  • Salt and freshly ground black pepper
  • 1 1/2 cups chicken stock
  • 1 3/4 tsp paprika
  • 1 1/4 tsp turmeric
  • 1/2 tsp garlic powder
  • 3 bay leaves

YOU WILL ALSO NEED

  • 6 qt. Dutch oven or heavy pot with lid, slotted spatula
