Zucchini Gratin : Basically a big frittata filled with vegetables and a bit of cheese making it a healthy choice for dinner!

Ingredients
  • 2 small zucchini (about 1 lb)
  • 1 onion, finely chopped       
  • 2 cups whole milk
  • 1 cup fresh bread crumbs
  • 3 eggs, beaten
  • 3/4 cup Parmesan cheese
  • 1/2 cup uncooked white rice
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 teaspoons fresh thyme
  • Extra-Virgin Olive oil
