Yellow Squash Fritters - verrrrrryyyy good!!! These are easy, quick & simple!! Just delicious!! Can try doing them with zucchini or a combination of squash & zucchini!!

Ingredients
  • 2lbs Yellow Squash (2-3)
  • 1 teaspoon sea salt, plus extra to taste
  • 2 green onions, split lengthwise and sliced thin
  • 1 large egg, lightly beaten
  • Freshly ground black pepper
  • 1/4 cup maninis all-purpose flour
  • 1/2 teaspoon baking powder
  • Canola oil, for frying
  • 1 cup greek yogurt
  • 1 tablespoon chopped chives
  • 2 tablespoons lemon juice
  • 1/4 teaspoon lemon zest
  • 1 Pinch of salt
  • 1 tsp crushed garlic
