From the wonderful Pam Anderson, these soft, easy-to-make biscuits are light and delicious–the perfect pairing for the caramelized pineapple underneath (which winds up being on top!)

Ingredients
  • Pineapple
  • 3/4 cups Packed Brown Sugar
  • 3 Tablespoons Unsalted Butter
  • 1-1/2 cup Chopped Fresh Pineapple (I Used Chopped Peeled Green Apples)
  • Biscuits
  • 2 cups All-purpose Flour
  • 2 teaspoons Baking Powder
  • 1/4 teaspoon Baking Soda
  • 1 teaspoon Sugar
  • 3/4 teaspoons Salt
  • 3/4 sticks (6 Tablespoons) Unsalted Butter, Frozen
  • 1 cup Buttermilk, Plus Extra If Necessary
