I absolutely LOVE nachos! They are my favorite meal when I’m cooking for myself. Lots of veggies and cheese are always good.
INGREDIENTS:
- 1/2 cup Extra Light Olive Oil
- 2 tablespoons Ancho Chili Powder
- 1 tablespoon Cumin
- 1/2 teaspoon Kosher Salt
- Juice of Two Limes
- 1-1/2 pounds Boneless-skinless Chicken Thighs {or breasts}
- 1 handful Fresh Cilantro
- 1 large bag Whole Grain Tortilla Chips
- 2 cups Freshly Grated Cheddar Cheese
- 1 recipe Grilled Sweet Corn Salsa {link in the post}
- 1 cup Canned Black Beans, drained and rinsed
- Toppings:
- Sliced Green Onions
- Sour Cream
- Hot Sauce
