I absolutely LOVE nachos! They are my favorite meal when I’m cooking for myself. Lots of veggies and cheese are always good.

INGREDIENTS:

  • 1/2 cup Extra Light Olive Oil
  • 2 tablespoons Ancho Chili Powder
  • 1 tablespoon Cumin
  • 1/2 teaspoon Kosher Salt
  • Juice of Two Limes
  • 1-1/2 pounds Boneless-skinless Chicken Thighs {or breasts}
  • 1 handful Fresh Cilantro
  • 1 large bag Whole Grain Tortilla Chips
  • 2 cups Freshly Grated Cheddar Cheese
  • 1 recipe Grilled Sweet Corn Salsa {link in the post}
  • 1 cup Canned Black Beans, drained and rinsed
  • Toppings:
  • Sliced Green Onions
  • Sour Cream
  • Hot Sauce
